Corn Chat

Ingredients :( To serve--4)

1. Corn -- 1 cup
2. Apple-- 1/4th Cup Chopped
3. Tomato-- 1/4th Cup Chopped
4. Lemon juice-- 1 1/2 tsp
5. Pepper powder-- 1/4th tsp
6. Green Chilli-- 1 tsp (Chopped)
7. Ginger-- 1/4th tsp (crushed)
8. cheese-- Grilled for Garnish
9. Coriander Leaves-- For Garnished (Chopped)
10. Salt to taste.















Method:

1. Boil the corn in pressure cooker or in microwave 8-10 min.
2. Mix all ingredients in a bowl except coriander leaves.
3. Keep it aside for 6-10 minutes.
4. Before you serve garnish it with chopped coriander leaves and crushed cheese.

This Chat is one of the simplest Chat. Serve it with Dinner Time.

Aloo Mutter

Ingredients: (Servings : About 4)

1. Chopped Onions -- 3/4 th cup
2. Potato (Boiled and Chopped into cubes) -- 1 & 1/4th cup
3. Shelled Peas / Frozen Green Peas -- 3/4 th cup
4. Green chilli -- 2 pcs chopped
5. Garlic cloves -- 2 to 3 pcs chopped or paste
6. Cummin Powder -- 1/4 th tsp
7. Ginger -- 1/2 inch piece (grated or paste)
8. Cilantro (Coriander Leaves) -- 1/4 th cup chopped
9. Tomato -- 2pcs (1 chopped and 1 cut into half)
10. Garam masala and Red Chilli powder -- 1/2 tsp of each.
11. Cummin seeds -- 1/4
12. Cloves - 3pcs
13. salt to taste













Method :

1. Take a tbsp of oil and heat it. Add Cummins seeds, cloves, green chopped chili.
2. Add a pinch of turmeric powder and then the chopped onions.
3.Fry it for a few minutes and then add cumin powder,ginger,garam masala, chilli powder fry it for few minutes on low flame then add chopped tomato, potato & peas.
4. Add a little water, if required. Cover the pan with lid and cook until the peas and potato are tender (approx 10 minutes). Stir in between. Add salt while cooking.
5. Cook for a few minutes. Garnish with a few cilantro leaves and milk cream (Malai).
6. Try it with Puri or Parathas.

Gajar Halwa


Ingredients: ( To Serve -- 4)

1. Grated Carrot -- 5 cups(Crushed)
2. Condensed milk -- 1lit.
3. Khoya(Mava) -- 25 grm.
4. Cashews and Raisins -- 1 tbsp each
5. Ghee -- 2tsp
6. Sugar -- 6 to 8tsp.
7. Elaichi (Cardamon Powder) – 2 pinchs















Method:

1. Take 2 tbsps of Ghee in a pan and heat it on low flame.
2. Add crushed carrot and fry proper on low flame.
3. If it fry proper then u feel smell is good.
4. Add milk and mix it,then cover it atleast 5-8 min. on low flame.
5. Roast the cashew and raisin in ghee & take mava put in a pan and mix it proper.
6. Add sugar then mix atleast 2 min.
7. Garnished with crushed cashew & mava.

Serve chilled or hot (as desired).

Aloo Paratha

Ingredients:

1. Potato -- 3 pcs (Medium size)
2. Onion -- 1/4th cup(chopped)
3. cumin Seeds -- 1/2tsp
4. cummin powder-- 1/2 tsp(jeera powder)
5. Ginger --1/2 tsp paste
6. Red chilli powder -- 1/4th tsp or
Green chili - 3pcs (Chopped)
7. Oil - 2tsp
8. Salt to taste
9. Coriander leaves -- 1 tbsp(chooped)
10. Wheat Flour -- 2 cups
11. Oil - 1tsp














Method:

1. Boil and peel the potato. Mash well.
2. Take 2 tbsps of oil in a pan and heat it. Add cummin (jeera).
3. Now add the chopped onions and fry until brown.
4. Add chilli powder or Green chili, salt, Ginger paste and cummin powder and fry it for 2minutes.
5. Mix well with mashed potato and put on coriander leaves.
6. Shape into small round balls.
7. Make a soft dough with wheat flour, 1tsp oil and salt. Shape into a ball and roll into a four or five (as u like) inch circle.
8. Keep the potato ball in the center and close from the sides.
9. Brush with dry wheat powder and roll gently and evenly (Do not roll continuously).
10. Now place on a greesed tava / Flat pan (already hot) and cook (or roast) both sides.
Spread a little ghee on it.
11. Serve hot with DAHI/ Yogurt and pickle or chutney.

Note: If it does not turn out great, do not despair. You will be able to make good parathas with some practice.

NAAN

Ingredients:

1. Maida (All purpose flour) - 4cups
2. Salt - 1/2tsp
3. Sugar - 1tsp
4. Baking Soda/ Powder - 1/2tsp
5. Egg - 2pcs
6. Milk - 1 cup (For making the dough)
7. Ghee / Butter / Oil - 5-6 tsp

Method:

1. Mix all dry ingredients (flour, sugar, baking powder & salt) properly
2. Beat eggs in one bowl
3. Mix eggs' paste with dry ingredients prepared in step 1.
4. Pour milk slowly while stirring the mixture. Add sufficient milk to make a soft dough.
5. Knead it properly (around 10-12 minutes) until all the ingredients are mixed.
6. Rub your hands with 1 tsp of ghee and apply it smoothly over the dough (it will make dough less sticky)
7. Place the dough into a bowl (draped with moist kitchen towel) and leave it for 2-3 hours at room temperature.
8. Divide the dough into 6-8 pieces.
9. Preheat the oven and baking sheets at 450 F
10.Moisten your fingures (and palm) properly with GHEE and take a dough ball in your hands. Ghee is required to avoid stickness and to give proper texture.
11.Apply pressure by your fingures in such a way that it looks like a triangle (or leaf) shape. Give initial triangle shape with your fingures and then pick one corner of the triangle. Allow it to fall (or throw it downwards without releasing the corner) to take the leaf shape. If you are not able to give a proper shape, dont worry. Use your hands (and mind). Give any shape but make it smooth.
12. Arrange the NAAN leaves on the preheated baking sheets (side by side) and bake them for about 6-7 minutes (Until they are baked properly and firm to touch).
13. Now slide the sheets under the broiler for 1 minute (DO NOT PUT FOR MORE TIME ELSE IT WILL GET BURN and all your efforts will go waste. It happened to me :(
14. Remove from oven and serve warm
